EASY HEALTHY ICE CREAM RECIPES YOU CAN DO at home

Peeps, I have to share these two recipes for healthy ice cream with cha because they are just SO GOOD. Uncomplicated ingredients: check, delicious flavor: check, healthy: check, easy to make: check. Do I need to say any more?

I have been doing these recipes since last year when we were still living in Oregon. Summer wasn’t showing up so I decided to take matters into my own hands. And boy did I do that, the way they turned out surprised even me. So, now that we have eternal (almost) summer here in Arizona I can see myself enjoying some home made ice cream for many many days. And even though we have to stay at home for now, I promise a bowl of ice cream puts everyone in a good mood.

I found this super easy recipes for healthy ice cream on Pinterest and ended up tweaking them after making them a few times. You know I like to focus and only share recipes that aside from being delicious, they are easy to make. Because as much as I love cooking, avoiding processed foods and having a huge appetite don’t go well together with time consuming dishes. And guess what? One is a full vegan option and the other can be made vegan.

MANGO SORBET

This one can be made with any fruit you want, but the texture might change a little but still yummy. For this healthy fruit sorbet, I prefer to use honey instead of maple syrup, which are the two I have on hand, but you can use any liquid sweetener you like to make it vegan.

Other fruits to try it with: pineapple, watermelon, strawberries (or any berries really) cucumber, kiwi. omg yumm.

Mango Sorbet

This super easy recipe is perfect for a cold treat on a summer day, or any day really!

Equipment

  • blender

Ingredients

  • 4 fresh mangoes (mangos) You can also use frozen fruit
  • ½ cup water
  • cup honey or any liquid sweetener of choice

Instructions

  • Peel mangoes, cut in smaller pieces and place a sheet pan. Remove mango seed.
  • Place in freezer for about 3-4 hours, until completely frozen.
  • Mix water with honey in a glass or bowl to create a syrup, set aside.
  • Once frozen, add mango bits in blender and add the water/honey mix.
  • Blend until smooth, then pour mix onto a container and cover.
  • Place in freezer for an additional hour.

Notes

Before serving, let it sit at room temperature for 5 minutes. 
You can use any liquid sweetener you prefer or have on hand. 

I sometimes add Tajin, and if I have it, chamoy and lemon juice and make a full on Mangonada sorbet. You’re welcome 🙂

CHOCOLATE NICE CREAM

Now, this is a vegan recipe, but remember, you can change the sweetener if you prefer/have something else on hand.

L loves chocolate so I made this one with him in mind, and thought I wasn’t going to like it very much. Well, I was wrong, I loved it. The chocolatey flavor is perfect and the creaminess on point.

Chocolate Nice Cream

Makes this easy, healthy and full of flavor nice cream that even the sweetest tooth will love!

Equipment

  • blender

Ingredients

  • 3 medium bananas
  • 1 can coconut cream
  • 3 tbsps maple syrup I use the maple/agave mix from TJs
  • ¼ cup cocoa powder

Instructions

  • Peel bananas and freeze.
  • In a bowl, mix the coconut cream, cocoa powder and maple syrup.
  • Add frozen bananas and the coconut cream/cocoa mix to blender and blend until thoroughly mixed and it is nice and creamy. Adjust sweetness as needed.
  • Scoop into container and freeze for about 6-8 hours

Notes

For super smooth nice cream, blend again once or twice during the freeze time. 
Before serving, let it sit at room temp for about 15 minutes. Enjoy!

NIEVES HEALTHYS QUE PUEDES HACER EN TU CASA

Se me ocurrió escribir las recetas también en español principalmente porque en mi familia hablamos en español y no quiero que se pierdan de estas recetas super delis y healthy, y menos ahora que estamos todos encerrados y no podemos ir por antojitos tan facil como antes.

Y pues ya saben que me aunque me gusta cocinar recetas saludables, también tienen que estar delis. No masomenos, no “pss no esta mal”. No. Delis, así que aquí les dejo las recetas, y también hice un videito para que lo chequen. y ya que andan por ahí suscribanse porfi. 🙂

Nieve de Mango

Prep Time5 minutes
Freezing Time5 hours

Equipment

  • licuadora

Ingredients

  • 4 mangos frescos tambien pueden ser congelados
  • 1/2 taza agua
  • 1/3 taza miel o cualquier otro endulzante liquido que prefieras

Instructions

  • Pela y corta los mangos en pedazos y distribúyelos en una charola para hornear
  • Congela por 3-4 horas o hasta que estén totalmente congelados
  • Mezcla agua y miel en un recipiente hasta que se forme un jarabe, deja a un lado
  • En una licuadora, mezcla el mango congelado y el jarabe
  • Licua hasta que este todo bien licuado, luego vacía en un recipiente
  • Congela una hora mas y listo!

Notes

Antes de servir, deja el recipiente a temperatura ambiente por 5 minutos.
Puedes usar cualquier endulzante que prefieras o tengas a la mano.
Puedes agregarle limon, chamoy y chilito en polvo para hacer tu propia mangonada 🙂

Nieve de Chocolate

Prep Time15 minutes
Freezing Time7 hours

Equipment

  • licuadora

Ingredients

  • 3 plátanos medianos
  • 1 lata crema de coco
  • 3 cdas miel de maple o cualquier endulzante liquido que prefieras
  • 1/4 taza cacao en polvo

Instructions

  • Pela los plátanos y ponlos a congelar
  • En un recipiente, mezcla la crema de coco, la miel de maple y el cacao en polvo hasta que esten bien mezclados
  • En la licuadora, mezcla los plátanos congelados con la mezcla de crema de coco y licua hasta que tengas una mezcla cremosita. Puedes ajustar y agregar mas endulzante si quieres.
  • Vacía mezcla en un contenedor y congela por 6-8 horas y listo!

Notes

Si quieres que este extra cremosita, licua una o dos veces mas durante el tiempo de congelamiento. 
Antes de servir, dejar a temperatura ambiente por 15 minutos.
